Asian Salmon

Salmon is a tricky fish.  Cook it well, and it's one of the most enjoyable foods out there.  Don't, and, well . . . at least most pizza places deliver.  The key is getting flavor into the fish before you cook it, which means making a marinade.  The important thing to remember with this marinade is time:  20 minutes to 1 hour.  Less than 20 minutes, and the fish has no flavor.  More than an hour, and the fish is waterlogged (which, ironically, is not what you want in a fish).

For the salmon:
4 boneless salmon filets, skinned
1 green onion, sliced
1 clove garlic, minced
1/4 cup vegetable or peanut oil
3 T soy sauce
1/8 t pepper

For the sauce:
1 T vegetable or peanut oil
1 garlic clove, sliced
1 green onion, sliced
2 t sesame oil
2 t soy sauce
1 1/2 T peanut butter

1) Combine first 6 ingredients in a large bag.  Seal it.  Marinate fish for 20 minutes to 1 hour.

2) Heat 1 T oil in small saucepan over medium heat.  Add garlic, and saute until garlic is tender.  Add green onion; saute until tender.  Add 2 t sesame oil, 2 t soy sauce, and liquid from marinade.  Bring to a boil, reduce heat, and simmer for 10 - 15 minutes.  Stir in peanut butter until smooth, simmer 10 minutes.  Keep warm. 

3) Heat a large non-stick skillet over medium-low heat.  Cook fish until done, approximately 4 minutes each side.  Serve with sauce.
